Tiny pancakes.
Big personality.

A brother and sister from Mt Eliza, a hot griddle in Camden Lock Market, and a Dutch street snack the UK had never properly met. This is how Stacked got stacked.

★ Origin

How it started.

Kane and Jessica Harrison grew up in Mt Eliza, an hour south of Melbourne. Two foodies, one shared obsession with market culture, and a deep family-grade sweet tooth. After both moving to London — Jess via a six-month travel stint, Kane via sixteen — they finally did the thing they'd been talking about for years: opened a market stall.

In January 2013 they pitched up at Camden Lock Market with one product nobody in London was making properly — poffertjes. The bite-size Dutch pancakes that the Harrisons had grown up loving at the markets back in Melbourne. Within months they were open seven days a week.

What started as a single stall became a national rotation — Camden Lock, Southbank Christmas Market, Brick Lane, London Zoo's Sunset Safari, Whipsnade, Ealing Jazz Festival, Notting Hill Carnival, Grand Design Exhibition, Spitalfields, weddings, festivals, corporate functions. Thirteen years of cooking poffertjes fresh, in front of people, exactly the way they were meant to be eaten — together.

Now we've opened our first permanent kiosk at Bluewater. Same recipe. Same toothpicks-and-sharing ethos. Bigger stage.

★ Milestones

The road so far.

From rented griddles to a national rollout. (We move fast when we're hungry.)

2013

Camden Lock Market

Jess and Kane pitch their first stall in January. Open seven days a week within weeks. Brick Lane, Notting Hill Carnival and Camden Christmas Market follow that same year.

2014

Southbank Christmas Market

The Stacked stall lands its longest-running residency — every winter at the Southbank from 2014 through 2021. London Zoo Sunset Safari starts the same summer.

2017

First Bluewater kiosk

A pop-up kiosk trades at Bluewater Shopping Centre — our first taste of shopping-centre life, and the seed of what comes next.

2018

Festival circuit

Grand Design Exhibition, Ealing Jazz, Whipsnade Zoo, Spitalfields, weddings and corporate gigs. A fully-formed events business operating alongside the markets.

2026

Bluewater permanent kiosk

After 13 years of stalls, we open our first permanent home — Bluewater Shopping Centre. More UK locations to follow.

★ What we stand for

No shortcuts.
No moderation.

Three things we'll never compromise on — even when it would be easier (and cheaper).

Fresh, always.

Every poffertje is griddled to order. We don't freeze, we don't pre-batch, we don't reheat. If we can't make it fresh today, we don't serve it today.

Joy over restraint.

We don't do sad portions. We don't do "you can have one topping." Life's hard enough — your treat shouldn't be apologetic.

Made in plain sight.

Open kitchens, no theatre curtains. Watch the pan, watch the flip, watch the sauce hit the stack. It's half the fun.

★ The Team

The pancake whisperers.

A small, very-caffeinated crew making the magic happen.

Kane Harrison

Co-Founder & Director

Mt Eliza native, sixteen-month traveller, hospitality-trained. Did the maths on a Camden stall and never looked back.

Jessica Harrison

Co-Founder & Director

Kane's sister, the other half of the Mt Eliza obsession. Spent six months travelling before landing in London and saying yes to the stall.

The Kiosk Crew

Bluewater & Beyond

Friendly, energetic, full of beans before opening time. Trained to flip poffertjes, talk toppings and read a queue.
